The Criollo variety of cacao is a rare gem, once on the brink of extinction. Revered by the Mayas and Aztecs, its cultivation dwindled due to its low yield. However, Criollo cacao, making up just 0.01% of global cacao production, stands out for its unparalleled quality. Its unique creaminess, sweetness, and roundness are attributed to the absence of tannins, which typically impart bitterness.
In 1994, Domori laid the groundwork to revive this exceptional cacao. Gianluca Franzoni, the founder, collaborated with growers and research centers to delve into the Criollo variety. This led to the establishment of the first nursery in Venezuela, giving birth to Hacienda San José. Today, its 185 hectares of grafted cacao stand as a testament to the recovery of several Criollo varieties. Through relentless efforts, the Criollo cacao market share has grown from a mere 0.001% a decade ago to around 0.01% today.
2017 marked a new era for Criollo cacao with the foundation of Hacienda San Cristobal in Ecuador. This venture aimed to bring the finest cocoa to chocolate aficionados worldwide.
